Roasted Strawberry, Vanilla & White Chocolate Cheesecake

Strawberry and white chocolate cheesecake recipe

 

Recently we stopped into a Strawberry Farm to pick up some fresh, delicious and plump strawberries.   The berries were so beautiful I just knew I had to find a way to use them.  So I came up with this roasted strawberry, vanilla and white chocolate cheesecake.

For this cheesecake the strawberries are roasted with a little sugar and a split vanilla bean and then mixed with 3/4′s of the cheesecake mixture and the remaining quarter is mixed with melted white chocolate, forming the top of the cheesecake.  Even better, this cheesecake is low in fat, thanks to the use of low fat ricotta in place of cream cheese.

When I made this cheesecake recently, I sent it into my fiancé’s work and he came home with rave reviews.  Apparently one of his workmates could not stop raving about it, which put a huge smile on my face.  Doesn’t it make you feel good when you hear people enjoy your cooking?

      I'm not usually a fan of cheesecake either Dzenana, but this one was really delicious, and a little different and lighter, thanks to the cottage cheese. :D

    I've never made toasted strawberries before! Had no idea you can do that... sounds delicious, like strawberry jam :)

    And the feel of knowing someone loved your recipe is just so cool. It always makes my day when I hear about it :)

    Oh those are plump strawberries- I wouldn't have the heart to send such beautiful cheesecake off to work. I'd devour it at home!

      I'd rather send the cheesecake off to work than have it end up on my hips :D As much as I love to eat sweets, I actually get as much pleasure baking them and sending them off for someone else to enjoy.

      Sure Kulsum :D A cottage cheese cheesecake is a much lighter version of a traditional cream cheese cheesecake. If you try it let me know how you go.
