Mojito’s, they would have to be one of my all time favourite cocktails. Not only because they taste amazing, but because each time I sip on a Mojito they evoke memories of our holidays in Fiji, with long lazy days spent by the pool sipping on this tropical delight. My fiance and I have been to Fiji twice, even getting engaged there on our most recent trip, so Mojitos and Fiji will always hold a special significance to me.

So I couldn’t wait to see whether these Mojito Cheesecake Parfaits would actually taste like a Mojito, and indeed they do.  Delicious layers of biscuit base, cream cheese filling infused with lime, mint and rum, topped with finger lime caviar. Tropical, decadent and insanely delicious.  They are also deliciously simple to make too, requiring only a few steps, before the finally assembly of ingredients, and time to set in the fridge.

Mojito Cheesecake Parfaits with Finger Lime Caviar

Recipe adapted from delicious Quick Smart Cook.
Serves: 6

Ingredients
  • 20g unsalted butter, melted
  • 150g of biscuits, crushed
  • 150g of white chocolate
  • 150g of raw caster sugar
  • 60ml of water
  • zest and juice of 3 limes, plus 1 extra lime, sliced, to garnish
  • 100ml of white rum
  • 1 cup of mint leaves, plus extra to garnish
  • 400g of cream cheese
  • 250g of mascarpone cheese
  • 1 finger lime, split

Instructions
  1. Combine the sugar and water in a saucepan over a medium heat. Stir until the sugar dissolves and bring to the boil before reducing the heat to low and simmering for 5 minutes. Remove from the heat, add the mint leaves, lime juice and zest, and rum and cover and set aside to infuse for 20 minutes. Strain and set aside.
  2. Place the chocolate in a heatproof bowl over a pot of simmering water and stir until melted.
  3. Place the cream cheese and mascarpone in a food processor and process until smooth. Add the strained syrup and melted chocolate and process to combine.
  4. Combine the crushed biscuits and melted butter and stir to combine. Divide half the mixture between 6 glasses and press into the base. Top with half the cheesecake mixture. Top this with the remaining biscuit mixture and then layer with the remaining cheesecake mixture. Refrigerate for 1 hour to set.
  5. When ready to serve top with a dollop of cream, mint leaves and finger lime caviar.

    There is no chocolate in the ingridients, yet it is the first things you refer to in the instructions.. am I missing something?

    I have been interested in finger limes for a while. This cheesecake parfait looks so pretty with the finger lime caviar on top. I think I might have to look into growing some finger limes!

      Good luck growing your own Finger Limes. I'd love to grow my own too but sadly don't have enough room in my garden.

    Mojito is one of my favourite cocktails too! Also love bellinis made with fresh white peach or blood orange, and anything with ginger beer! These look absolutely gorgeous and great whether you're serving two people or a crowd - nice and easy to scale up or down.

      I agree, I love citrus based cocktails too. As for your question about finger limes, you can find more information here http://en.wikipedia.org/wiki/Citrus_australasica and here http://www.australianfingerlime.com.au/ They really are wonderful and bursting with flavour. I used the Pink Ice variety.

    Wow they look so polished and professional!

    I don't drink alcohol anymore (although I do eat it in desserts) but when I did my favourite cocktail was a Toblerone - Bailey's and chocolate is just too good!

      Thank you :D I was really pleased with how they turned out. I think the finger lime caviar really added an extra something to the way they looked, and it tasted amazing too.

    Oh man... There's so many amazing creations in this month's SABH, yours included! There's not a lot of cocktails that I like (being a Beer kinda guy) but I do love Mojito. And I didn't know you could make it into a dessert LOL! I think my Mum would be most excited about this, of all people. That woman loves her cocktails lol.     Mmm..these look divine. My husband and I love mojitos and they have a special place in our hearts as well as they remind us of Cuba where we had our honeymoon. Can't wait to try them!
