Happy New Year everyone!!! I hope 2012 is off to a great start for you. Have you made any New Year resolutions? I have made a few, and unsurprisingly, most of them, relate to food.
This year I would like to learn more about bread baking. While I’ve made a few loaves of bread here and there in the past, this year I would like to take that up a notch and learn how to bake a variety of different breads. One particular type of bread I want to make is sourdough, which is a well loved bread here in the Delicieux house, and in fact I have some dough for sourdough set aside. Fingers crossed it comes out right.
I’d also like to experiment with the use of different flours, both for bread and general baking.
Over the course of 2011 I became comfortable with making pastry for tarts, and this year I want to expand on that, and become comfortable with a variety of pastries.
Finally, I want to increase my vegetarian repertoire. When I find something delicious, it tends to become part of our regular dinner rotation, so I’m not always trying new vegetarian dishes. This year I want to change that and spend more time trying new recipes. Sure, there will be hits and misses, it’s part of the fun of experimentation, but I’m sure I’ll discover a whole raft of new delicious vegetarian meals.
So, in the spirit of doing things a little bit different this year, when I went to bake some banana bread the other day I decided to do something a little different. We’re lovers of banana bread at the Delicieux house, but I’d remembered seeing a number of banana cookie recipes over the course of last year, so I decided to try making banana cookies.
For my first foray into banana cookies I turned to a Martha Stewart Recipe. The combination of walnuts, oats, banana and chocolate sounded delicious, and it was. But like the Orange and Poppyseed Cookies I had made last year, the texture is nothing like one would expect at the mention of the word cookie. When I think of cookies I think of a texture that is crumbly and crisp, but these cookies are soft, almost cake like. That’s not to say they aren’t delicious, because they are, especially when served a little warm and the chocolate inside oozes with each bite.
So while these cookies are delicious, and smell divine when being baked, I think I will continue my quest for a firmer, more crumbly banana cookie.
So, do you know of a great banana cookie recipe? I’d love to hear from you. And have you made any food resolutions for 2012? What are they?
- 1½ cups wholemeal flour
- 1 teaspoon coarse salt
- ½ teaspoon baking soda
- 170g unsalted butter, softened
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1½ teaspoons pure vanilla extract
- ½ cup mashed ripe banana
- 1 cup old-fashioned rolled oats
- 200g of dark chocolate, chopped into chunks
- 60g of chopped walnuts
- Preheat oven to 190 celsius (375 Fahrenheit) and line a sheet pan with baking paper.
- Whisk together the flour, salt, and baking soda in a small bowl and set aside.
- Place the butter and sugar in the bowl of an electric mixer fitter with a paddle attachment and whisk until light and fluffy.
- Reduce speed to low and add the egg and vanilla extract and mix until just combined before addng the banana.
- Add the flour mixture and mix until just combined before stirring in oats, chocolate chunks, and walnuts.
- Use a tablespoon to scoop the dough into balls and place onto the prepared baking sheet and space about 2 inches apart.
- Bake for 12 to 13 minutes and let the cookies cool on sheets for 5 minutes before transferring to wire wracks to cool completely.

I've only made banana cookies once. They were fine, but nothing special. Yours look much, much better.
I'd like to more bread-baking too. Especially since I just got my first stand-mixer.

These were delicious, but I think next time I would add more oats. I would prefer a firmer biscuit though, so the search continues.

I actually baked quite a few breads in 2010 and then 2011 was gone with any major bread making which is such a shame as homemade bread is beyond words! So I think I'm going to still your resolutions Jennifer :-) Lovely cookies. And I can eat more of them. Not a bad idea at all
Make more bread you say? I just started doing that today after buying a great book called Dough: simple contemporary bread by Richard Bertinet. Comes with a 30 minute DVD on techniques, simple to follow, made bread sticks today, enjoyed by kids with a plough mans lunch.

They really are delicious, especially served warm which causes the chocolate to become molten and all the more delicious :D
I'm avoiding making resolutions, I do love your resolution to tackle bread making. I've ventured into bread making a bit and it is quite rewarding pulling a golden loaf of sweet smelling bread from the oven. Happy New Year!

They sound delicious, I think to make a gluten free version I might try quinoa flakes. I'm going to try a different variety of cooking, build my confidence and also try with baking gf breads on my bread maker! I have big visions for 2012, I want my blog to be like yours, you have a fantastic set up, one to be admired by all!

Those are some great resolutions you've set yourself. Wouldn't mind experiemnting in bread makign with you! And like you, we love our banana bread too. Hope you eventually find the recipe you're looking for!
I want to do more bread baking in the New Year too - I make a loaf every week but have got a bit stuck into the routine of plain old wholemeal or malted grain. I want to experiment with sourdough too so looking forward to reading about your experiences :-)

I made my first sourdough yesterday actually, it turned out a little flat though. The recipe I used was a shortcut sourdough, so I think next time I might try a more traditional recipe. But rest assured, when I find a recipe I am happy with I will share it :D

Your cookies are making me crave banana cookies now. There is something about the combo of bananas, chocolate and oats that is so comforting and satisfying. I grew up eating banana cookies that were iced with a maple-yogurt frosting. Now I want to ask my mom where she got the recipe!

These cookies do look tasty. The problem I have had with banana cookie recipes is that they do not have enough height to them and they are chewy. I am sorry that these did not turn out with the texture you like, but good luck in your quest for the suitable one.

Ooh these sound like a crunchy, portion-controlled version of banana bread. Yum yum yum!
Good luck with the Veggie recipes - sorry I won't be much help on that one! My food resolution this year is to learn to cook fish properly, and a variety of them - not just salmon which I can do perfectly most of the time! First try tonight with some steamed snapper.....

I'm inspired! The hot weather has turned the Bananas in my fruit bowl a bit spotty and no-one wants to eat them, I'm a bit Caked Out from Christmas so Cookies are sounding good!
Banana cookies are a great alternative LindaMaree :D My fiance has absolutely loved them and keeps sneaking them from the jar when he thinks I'm not looking ;)

I also tend to make Banana Bread or mufffins for the very same reason. I concluded it must be from the bananas as pumpkin cookies are cake like as well. Soft or crunchy, your cookies look delighful!

Oh I feel your pain, I too like a crisp cookie. I have been working on a banana, walnut and choc one for the last few months of last year. Project stopped due to Christmas. Have a few ideas up my sleeve and will keep you posted. In one way I am glad you are having the same issues. Saying that, yours look great and sound delicious. I thought the oats may have been the answer :(
I'm glad I'm not the only one having problems with a crisp banana cookie. I'll let you know if I come across a crisp version :D
