I flipped through my cookbooks for inspiration and stumbled across Rice Stuffed Tomatoes in Everyday Italian by Giada DeLaurentiis and thought I’d give that a try. I love tomatoes and I love rice so I thought it would be a great combination.

Whilst as satisfying as a regular potato salad you aren’t left with that heavy feeling and as a result of the lemon you feel somewhat refreshed. When I made the zucchini, haloumi and feta fritters recently I wanted a delicious salad to go with it. I love roast tomatoes and often make a risotto with roasted cherry tomatoes, so I decided to try roast tomatoes (this time Roma tomatoes) in a salad. The results were delicious.

Coriander and cashew pesto

Coriander Pesto Recipe

Coriander (cilantro) and cashew pesto makes a nice change from the usual basil and pine nut pesto. Coriander pesto provides you with a lot of variety as it can be used to flavour soups (such as my carrot and coriander soup), as a dip, on bruschetta, in a stir fry, as a dressing for some beautiful roast vegetables, as a flavouring for meat, or on pasta.
