I just had to share with you a recipe I developed for my latest article in Cravings Magazine. Before I stopped buying ice cream and started making my own at home my absolute favourite ice cream was Maggie Beer’s Burnt Fig, Honeycomb and Caramel Ice Cream. I couldn’t get enough of the stuff, despite the hefty price tag. I’d buy a tub, and scoop spoonfuls into a coffee mug, my favourite way to eat ice cream, and savour the amazing flavour. Luckily this was another one of those foods that my fiance didn’t like, but to be honest I was secretly quite happy he didn’t like it as it meant more for me. So my fiance would have vanilla ice cream with sprinkles (yes, he’s a big kid) and I’d enjoy my fig ice cream.

During the month of March Australian Pear Growers are celebrated Australian Pear Month, and as part of those celebrations I was sent a box of beautiful pears to inspire a delicious pear creation to celebrate pears. I couldn’t wait to join in and celebrate pears, so I thought for some time about what I would make. However the month of March quickly slipped away from me. First there was my fiance’s foot surgery and nursing him back to health, then there was my birthday and following that was a visit from my parents. Before I knew it there were only a few days left in March and I still hadn’t come up with a pear creation.

Rhubarb Cake Recipe

It’s impossible for me to go near a greengrocer shop without coming out with bags of fruit and vegetables. Shoes used to be my weakness, and in fact still are, but to a lesser extent, because nowadays I am obsessed with food and ingredients. A beautiful bottle of truffled oil holds the same allure as the most stunning and sparkly heels. I just can’t help but want them. It’s the same with fruit and vegetables. Last week it was the beautiful and interesting finger limes I spotted at my favourite grocer. I didn’t have a plan for them, I just knew I wanted them and would find a use for them when I got home. And find a use for them I did with the beautiful, and delicious Mojito Cheesecake Parfaits I made last week. Along with bunches of herbs, plump ripe tomatoes, rhubarb was another ingredient I found impossible to walk past. I justified it to myself that my Mum loves rhubarb and I would make a rhubarb cake while she stayed with us last week, which I then promptly forgot about.

My parents stayed with us last week. As they live in Tasmania and we live in Brisbane we don’t see each other all that often. Only every few years in fact. So it’s a bit of a treat when we see each other. As a result, I like to try and make sure I have food on hand that I know Mum and Dad like. That meant I’d purchased a bunch of rhubarb, which my Mum loves, and I’d planned to make a cake with, however as we ended up eating out so much during the week they were here I completely forgot about it. Sorry Mum!
