Gluten Free Lemon Cake

Lemons are kitchen essential I am never without. I use lemons in everything – from pastas, soups, cakes, tarts and drinks. The zing that they add always reminds me of summer, even when it’s cold and wet outside. So with my love of lemons, and having made Nigella’s Chocolate Orange Cake again recently I pondered a lemon version. The very next day I gave it a go and it worked out beautifully. As much as I love the chocolate orange version (which incidentally is one of my favourite cakes) this is now one of my favourite lemon cakes.

Fig Paste

Fig Paste

One of my absolute favourite thing is Maggie Beer’s Fig Paste. Served with a wedge of soft cheese it’s nothing short of amazing. And as far as I am concerned no cheese platter is complete without it. Unfortunately my fiance doesn’t like fig paste, and being a man of simple pleasures he simply enjoys cheese as is. I guess that’s a lucky thing though because it means more fig paste for me!

Each week I look forward to seeing what goodies we receive in our farmers boxes. There are all the usual things like potatoes, carrots, lettuce, tomatoes and onions, but it’s the seasonal items I look forward to seeing. Prior to signing up for our farmers boxes I used to purchase particular ingredients that I needed for recipes I wanted to make, but nowadays it’s my farmers boxes that guide my cooking as I look for new and interesting ways to use the ingredients I’m given. A bit like a MasterChef mystery box challenge I suppose.

It’s been raining again, a lot, and that usually leads to cravings for soups. Soups are infinitely comforting as there is nothing like slurping on a hot soup when it’s wet and miserable outside. Add a touch of spice and they somehow become more comforting through a double dose of heat both from the hot liquid and the spices.
