There are few things that I love more than roasted butternut squash. Apart from tomatoes it would have to be one of my favourite vegetables. It’s a vegetable I always have on hand, wherever possible. Not only is it absolutely delicious, it’s extremely flexible and can be used to make delicious soups, tarts, pizzas, risottos, pastries, and salads, which I’m sharing with you today.

Mojito’s, they would have to be one of my all time favourite cocktails. Not only because they taste amazing, but because each time I sip on a Mojito they evoke memories of our holidays in Fiji, with long lazy days spent by the pool sipping on this tropical delight. My fiance and I have been to Fiji twice, even getting engaged there on our most recent trip, so Mojitos and Fiji will always hold a special significance to me.

I know cakes are the usual birthday fare, and as much as I love cakes I didn’t actually feel like a cake for my birthday today. I had my eye on the Salted Caramel Chocolate Tart recipe in Rachel Allen’s Entertaining At Home for some time but had put off making it. Mainly because my fiance doesn’t like salted caramel and there is no point making such a decadent recipe just for me, however with it being my birthday I decided if you can’t make exactly what you want and stop worrying about everyone else on your birthday when can you?

When I was younger I hated apricots. I think it came from my hatred of sultanas, raisins and mixed peel and I had simply just associated apricots as yet another horrible leathery dried fruit, because in all honesty I can’t remember ever eating a fresh apricot back then. While I can happily say today I enjoy dried apricots today, especially Turkish apricots, I still simply cannot stand sultanas, raisins and mixed peel – bleh.
