The other day I wanted to make muffins, but I wanted to create a breakfast style muffin. Orange, Honey and Cinnamon muffins were the end result. As I wanted the muffins to be something you could enjoy at breakfast I used wholemeal flour, quinoa flakes (for a bit of protein) and reduced the amount of sugar, because the last thing you want for your first meal of the day is a sugar hit.

With all the focus on Christmas lunch, making something delicious and a little bit special for the day can be forgotten. Whilst we all look forward to a delicious, and usually large, Christmas lunch you don’t want Christmas breakfast to be a huge meal. This coconut bread is a perfect alternative. It’s something a little bit special and easy to prepare in advance.
