Lemon Shortbread

Shortbread is not the most attractive thing to photograph, in my mind at least.  It’s beige and flat and, well, boring to look at.  But really, that’s not the point of shortbread is it?  While shortbread doesn’t win in the looks department, it’s delicious, in it’s crumbly melting butteriness.

My Lemon and Cranberry Shortbread is a kind of shortbread tart, pre cut and ready to be broken into individual wedges to be enjoyed.  The tarts can be wrapped in cellophane or placed into beautiful tins and given to family and friends as gifts.  What could be better than homemade shortbread this Christmas? Ok maybe the Wicked Chocolate Orange cookies, the last post in my Edible Gifts series.

Even better, with my Lemon and Cranberry Shortbread no rolling is required.  Simply press the shortbread into tart tins, score with a sharp knife and bake.  It couldn’t be simpler.

I’m so glad I discovered your blog, I think your lemon and cranberry shortbread looks lovely! We’re definitely non-traditional shortbread lovers in my family, our absolute favorite is my mum’s white chocolate & cranberry shortbread fingers.

i used to love just plain shortbread. and last year i was obsessed about making orange shortbread. but i found that i also love choc chip shortbread.
anything which has butter as its main ingredient is a favourite in my book!

I’ve never had chocolate chip shortbread. I’m usually a shortbread traditionalist, but I will have to give it a try. :D

Shortbread is one of my favorite cookies, I love the plain buttery version as well as chocolate and lemon!

I do love shortbread! My favorite is a salted rosemary – sweet and savory at the same time. Though yours looks delish and I love that you don’t roll it.

I love shortbread but often find it needs an extra flavour to really lift it. Cranberry and lemon sounds perfect, and gorgeous in the run up to Christmas.
