
I love this Kiwi Fruit Sorbet. It’s so soft that it’s scoopable right out of the freezer, which I love, and it’s super simple to make too. But best of all it’s so refreshing with the combination of Kiwi Fruit and Lemon, making it the perfect summer treat. What could be better than enjoying this sorbet on a hot summers day? It ticks all the right boxes as far as I’m concerned.
The recipe for this sorbet comes from by Caroline and Robin Weir. And definitive guide it is! I’d consider it a bible to making your own ice creams and sorbets. It’s full of fantastic tips, detailed explanation of the tools used to make ice cream and sorbets, and has a thorough history of ice creams. But the best part of this book is the amazing array of recipes. There are over 400!!
If you are looking to start making ice creams, sorbets or any type of frozen dessert at home, I highly recommend this book.

| Kiwi Fruit Sorbet |
- 450g of kiwi fruit, skin removed
- 150g of sugar
- 150ml of boiling water
- zest of 1 lemon
- juice of 2 lemons
- To start make the sugar syrup. Pour the sugar into a jug and top with the boiling water. Stir until the sugar has dissolved. Allow to cool before refrigerating.
- Place the kiwi fruit in a food processor and blend until smooth. Add the lemon juice, zest and sugar syrup and process to comine. I chose to strain the mixture to remove the seeds, however this step is optional.
- Chill the mixture until completely cold.
- Turn on your ice cream machine and carefully pour the mixture into the churn and follow your manufacturers instructions.
- When the sorbet is done pack into a freezer container and freeze for a couple of hours before serving.

I love sorbet, it’s so light, refreshing and delicious! I can almost taste the sweet and sour kiwi notes!

400 recipes!?! :O I can’t even think of that many ice cream flavours!! I’ve never had kiwifruit sorbet before (or any other kiwifruit dessert for that matter!)- it like a really delicious and light flavour though! I might have to try this!
