Cauliflower Ragu recipe

Cauliflower is a vegetable that doesn’t get much love.  It’s strange looking, fills the kitchen with an almost sulfurous smell when it’s being cooked, and I think we all have horrible memories of it served to us as children with all the nutrients steamed out of it.

Despite all this, cauliflower might be a vegetable that you want to rediscover because it provides a number of health benefits.  It’s high in antioxidants, vitamin C, maganese and anti-inflammatory agents.  In fact, the humble cauliflower is being studied for it’s cancer preventing potential.

So, with this in mind, I wanted to provide you with inspiration to give the humble cauliflower another chance, and use it in a new way that might change the way you feel about cauliflower.  In researching cauliflower recipes I came across a recipe for Cauliflower Ragu in Mario Batali’s Molto Gusto cookbook (one of the many I purchased while on holiday in the United States) and decided this would be the first recipe I would make in my NewWave 5 in 1 Multicooker. I’ve been slow (no pun intended) to pick up on the slow cooker trend, dismissing it as simply a cooking tool for meat dishes.  Having trialled the NewWave Multicooker (which admittedly has a lot more features than your regular slow cooker) I soon realised I was wrong and have used it to make many dishes ranging from soup, cauliflower ragu, and risotto.

The Newwave 5 in 1 multicooker is a new type of slow cooker available from Kitchenware Direct (who were kind enough to send me one to test out).  You can use it as a slow cooker, pressure cooker, rice cooker, steamer and electric pan.  It comes with a removable, dishwasher safe nonstick bowl, measuring cup, spoon and steamer insert.  The inbuilt timer enables you to set your slow cooker to start while you are at work and come home to a freshly prepared meal.  What could be better than that?

So how does it perform?  The first test for me was to make a risotto as I am used to making risotto in my old rice cooker.  The Newwave cooker blew my old rice cooker out of the water and was able to make risotto in 7 minutes using the pressure cooker mode! A risotto in 7 minutes, how impressive is that? As a slow cooker, which is the mode I used to make the cauliflower ragu, it performed well also, and cooked the cauliflower perfectly and also preserved the flavours well.

The only downside is the size, which at 6 litres in capacity, the unit is quite big.  However, given the fact it replaces a steamer, rice cooker and pressure cooker that is not such a big issue.

Yummy, what an interesting recipe! Never seen a cauliflower ragu before, but I'm thrilled that someone loves this undervalued veggie as much as I do :) Good luck to the contest entrants!

Cauliflower IS seriously underused, I've been trying to find recipes other than fritters or ones baked in cheese, so thanks for a different take on cauliflower :)

You're welcome :D I agree cauliflower is underused. I think a lot of it is based on bad experience.

I would love to win this because space is a premium in my kitchen and I'd love an appliance that can do so much all in one! I think the first thing I would make would be my Nana's amazing ham hock, vegie and barley soup which she used to whip up in her pressure cooker :)

Love the idea of vegie ragu… I could probably even tempt my boy the carnivore with that as a side.

My relationship of 39 years is sadly over my husband does not feel the same way about me any more. We have to sell the family home and I am not in a position to buy anything else. I love making a home and I love cooking with a passion to me it is a wonderful way to show your love plus it is wonderfully creative and inspiring, whether you are using a recipe or just making something up! What a wonderful invention this Multicooker! As our possessions are going to be divided and my husband is keen to have the pressure cooker and our crock pot (a wedding present) though wonderful has always been too small. I have been tossing up whether to buy a rice cooker, although I love cooking I am disastrous when it comes to rice! My husband is a great rice cooker. Then I thought probably will not have room for a rice cooker when I move along with everything else. The first thing I would cook would be a Morrocan Beef Tagine. I just cooked one last night in a lovely authentic tagine cooker that my beautiful daughters gave me. I would never tell them but give me the pressure cooker or slow cooker anyday! Although the cooker looks wonderful the meat did not go anywhere as tender as when I cook it in the pressure cooker and the top of the stove is covered with splattered tagine and the large top was very heavy to constantly pick up and stir (have carpal tunnel in right hand at moment). A wonderful thoughtful gift though and they bought it from an Oxfam shop which I love. I love this cooking site and have used many of the recipes. Was it your computer that died and you lost all that information! If so I sympathise. I was recently in hospital for a long time and I had not backed up anything on my computer before I left. My husband was using it and my dear old friend (The computer) perished and was unable to be repaired and I lost many treasured things (my own fault completely) including treasured recipes. Thankyou again for this wonderful site. Debbie Newman

Hi Debbie,

So sorry to hear about your situation, and your recent visit to hospital. I hope things improve for you soon. :)

Your daughters sound wonderful, and how lovely of them to give you a tagine.

Yes, my computer died recently, drowned to be more exact!! Sadly I lost everything on it, including photos for future posts, which now means I have to recook and take photos of the dishes again. Losing your computer has a big impact as these days we all seem to have digital photos and if your computer goes, so do those memories. Backups are key, and I will never forget to backup again!

Best of luck in the competition Debbie and thank you so much for your comment.

I would love to win the New Wave 5 in 1 Multi Cooker because it would provide so many kitchen appliances that are on my wish-list (slow cooker, pressure cooker, rice cooker). I would try making chorizo & pea risotto as my first dish using the pressure cooker function. That should set a precedent for creating more involved dishes for mid-week meals when time is rushed.

Reply

Hi Angeneta, a risotto in the Multicooker is fabulous and SO fast. You can make one in 7 minutes!!! Best of luck in the competition and thank you for taking the time to leave a comment. :D

I would love to win this because it would make cooking easier, plus it would save space in our very small kitchen as I could give away my rice cooker, microwave steamer and huge slow cooker. After your description, the first thing I would make is my pumpkin risotto. I do it in the saucepan and it takes forever, plus it is always a bit gluggy, so it would be so much better in this machine :-)

Reply

Risotto is a great thing to make in the Multicooker Liz. I always make risotto in a rice cooker as it's so much faster than doing it stove top. Pumpkn risotto in 7 minutes is a fantastic thing!! :) Best of luck in the competition.

I would love to win this Newwave 5 in 1 Multicooker because as a mum with 5 children I am all for cooking healthy but quick and easy meals. The first meal I would cook would be a pumpkin risotto. I've never cooked a risotto cause I have never found an easy way to do it and lets face it…a meal that can be ready in 7mins is one that makes me one very happy mum to spend less time in the kitchen and more time with my family.

I would love to win the 5 in 1 multicooker! It would be fantastic for me as I house and pet-mind full-time, which means I live out of a suitcase and taking my favorite cookware etc, is either not an option, or becomes a nightmare everytime I move. This would save me so much space. It would be used every day, morning I would use it to make my quinoa which i have instead of oats, then meals at night, casseroles, risotto etc.

I would love to win the newwva 5 in 1 multicooker because I am obsessed with cooking appliances, thats what the partner says, I say you can never have to many! I have a few but not enough for everything I would like; I love the slow cooker but I could only afford a cheapy so it's not the best, the rice cooker is something I have always wanted to try along with the pressure cooker. With that in mind, I would like to try a couple of rices dishes as I am so bored with just plain old boring rice as a side dish next to a really nice slow cooked meal.

It's a combination of chicken thigh fillets, sour cream, white wine, mushrooms, cream of chicken condensed soup and paprika set to slow cook for eight hours. Very simple and sooooo tasty.

My old slow cooker jumped on the floor a few months ago, and its absence has made making some of my favourite dishes much more difficult. Like most people my life is a busy one. Due to economic times my husband has had to take work overseas. Leaving me to not only run the home and our three children but also to home school our autistic child. We are managing to cope with this arrangement because of organisation. Having the NewWave Multicooker in my home would definitely help with me by giving me not only the option of 5 different ways of cooking, slow cooker on when I have time in the morning, pressure cooker when I have had no time, but reducing the amount of equipment that I need to keep in the house. My kids are not huge fans of Cauliflower but your recipe for Cauliflower Ragu looks amazing so I think if I was lucky enough to win a NewWave Multicooker your Ragu would be first in the pot.

Hi, thank you for being so generous as to give this fabulous prize in a competition. I have never used a pressure cooker but have heard how wonderfully it cooks the food. My mother had an old pressure cooker when I was a child, but it was two pieces of cast metal that went on the stove and do not remember it being around as a teenager. I would love to win this prize. I am a single mother of one boy who has separation anxiety. This means that I am unable to work. I need to be here for him before and after school and on his many days off. My car has had a lot of work lately which means I could not hope to afford a pressure cooker myself. I cannot keep up with the repairs on the car. and I cannot see any hope in sight. I cannot afford a mechanic for the car, so a neighbour has been helping me. For that I am grateful. I just wish he knew a bit about fixing cars. He seems to be doing more damage than good.

Anyway, I love cauliflower, but my son does not, so with only the two of us, I eat less of it than I would like to. Your recipe would be the first thing I would cook in it, because I think I could actually get my son to eat it and then we would both be happy. Thank you for letting me vent a tiny bit.

I have fond memories of my dear mother cooking delicious meals in a pressure cooker, usually for around 10 to 14 people. The majority of the meals would melt in your mouth dispite the fact that we lived on a farm and only had home butchered meat. Having looked at the recipes I think I would try all of them as my family all enjoy trying new dishes. I feel the cooker would be a real asset in my kitchen.

I would love to win a new wave multicooker. The first think I would make would be my pumpkin and sweet potato soup, loaded with nutmeg and pepper….the second would be a cauliflower and sage risotto…one of my favorites….it would be interesting to see if I would miss the therapeutic stirring…

I would love, no make that, need a New Wave 5-in-1 cooker badly! We both work full time and have a 2year old and a 1year old. We are constantly on the run and not able to get good meals served up in time for the boys. By the end of the night, we are both tired and worn out from running around. I would be making a Beef and red wine casserole with parmesan dumplings with the pressure cooker function. Top it off with yummy dumplings and served with mash and carrots that the boys love.

As vegetarians, my wife and I steam LOTS of veges.
First dish would be my whole cauliflower curry.
4 tomatoes, 1 large onion, 3 cloves garlic, 1cm ginger all blended to a paste.
Stir fry with tsp tumeric, 1/2tsp chilli powder, tsp garam masala, 1/2 tsp salt. (and 1/2 tsp cayenne pepper if extra heat desired).
Add cup frozen peas, stir.
Place whole blanched cauliflower in pot, pour mixture over cauliflower and cook for about 35 minutes.

Jennifer, I recently featured on TV (9′s Today Show) cooking a Massaman Beef pie and the ingredients for the pie was made in a slow cooker, These are sensational for all dishes and and Beef becomes the best dish in the house. I would love to experiment with new foods and hopefully publish a few recipes one day. (using my new cooker – of course)

My partner does all the cooking (while I do the baking and dessert-making) and I am so grateful, especially as I see how much time it can take. I would love to win this amazing appliance for him so that he has more free time to relax after a long day at work! I think I’d request Ratatouille as the first dish though :)

I would love to win a New Wave 5-in-1 cooker because it would save time, electricity, money, nutrients and everything would taste delicious. I think I would make a seafood paella- they have never cooked properly for me in a pot on the stove top- maybe I need the 5-in-1 special touch.

I’ve lost my inspiration and motivation to cook lately – too much to do and too little time which is a common problem these days. The Newwave 5-in-1 Multi-cooker may be just thing to reignite my culinary interest, and I would certainly try cooking a risotto. This is a challenge to do well and a good result would certainly impress me!
