Roasted Pumpkin Lentil Feta pithivier recipe

With all the cold weather we are having you can’t help but crave comforting food.  Lots of soups have featured on our menu, however the other day I had a craving for something a little different.

A Pithivier is a round puff pastry tart which originates from the French town of Pithiviers,and is traditionally filled with an almond cream.  I’ve had Pithivier many times before, out at restaurants, usually in the form of a mushroom Pithivier, however for I decided to combine sweet roasted pumpkin (another of my winter favourites) along with lentils and creamy Dannish feta.

The result is a deliciously savoury tart that is so comforting on a cold winters day.  It’s also equally impressive at a dinner party.

Who says we can't have pumpkin in the summer? I would, and I know I would love this, I'm a huge pumpkin, squash fan, I love the texture too!

I love pithviers. Myfillings must include goats cheese like yours – yum! I'm actually making lentils with pumpkin and feta for dinner tonight so this combo obviously appeals to me:)

It’s so fascinating that thing with the weather, especially when you have contact with someone living on the other side of the world… Like it’s cold with you, but super hot here and it’s a rainy season somewhere else. Diversity :)

I love pithiviers! Anything that gets me close to puff pastry really lol. I don’t think I’ve ever met one that I didn’t like! :P
