Coconut Bread

With all the focus on Christmas lunch, making something delicious and a little bit special for the day can be forgotten.  Whilst we all look forward to a delicious, and usually large, Christmas lunch you don’t want Christmas breakfast to be a huge meal.  This coconut bread is a perfect alternative.  It’s something a little bit special and easy to prepare in advance.

Bill’s restaurant in Sydney is famous for it’s coconut bread, which is marked to never be removed from the menu, and the recipe for this coconut bread comes from none other than Bill Granger.  The bread is delicious toasted and served with a little cinnamon butter or jam or with caramelised bananas or other fruits (my favourite is nectarines) and dusted with icing sugar.  It can also be served un-toasted with fresh strawberries as something to munch on while opening Christmas presents.

Coconut Bread Recipe
Recipe from Bill’s Food by Bill Granger

2 eggs
300ml of milk
1 teaspoon of vanilla essence
2 1/2 cups of plain flour
2 teaspoons of baking powder
2 teaspoons of cinnamon
1 cup of caster sugar
150g of shredded coconut
75g of unsalted butter, melted

1. Preheat oven to 180 degrees celsius and grease and flour a loaf tin.

2. Sift the flour and baking powder together into a bowl and add the cinnamon, sugar and coconut.  Stir to combine and make a well in the centre.

3. Whisk the eggs, milk and vanilla together and pour into the flour mixture and mix until just combined before adding the melted butter.  Stir until the mixture is smooth, being careful not to overmix.

4. Pour into the prepared loaf pan and bake for 1 hour or until a cake tester comes out clean.  Leave in the pan to cool for 5 minutes before removing and placing onto a wire rack to cool.

I have GOT to make this loaf – so many raves about it.

For me Xmas brekky is pretty much just a piece of fruit, as I need an empty belly for the onslaught of the Xmas lunch feast!

I've eaten Bill's coconut bread in his restaurant and it was so delicious! This is a great christmas morning breakfast :) We always do a stone fruit salad in our house Christmas morning!

Coconut bread sounds great! Never really made one, which is a shame as I really love coconut in all things sweet!

Oh My!! This looks so good!! Will be trying this when I go home to my parents for Christmas, would be lovely for breakfast with lots of tropical fruit! Yum!
